Super duper easy… I’ve adapted a couple of other recipes that I found online to produce one that worked for me… you can add mint essence or orange oil from do terra … you can leave out the vanilla. You can also make the base from soaked cashews and almonds and omit the oats if you prefer… Have fun play and be creative.
Oh and try to use organic ingredients if possible.
Line a 20cm x 20cm tin with greaseproof paper
Base 125g rolled oats 125g ground almonds 30g coconut oil 30ml maple syrup (make sure organic pure) 1sp vanilla powder
Mix together in blender and then push down into a tin …. put in freezer
Caramel 350g raw pitted organic medjool dates 1/4 tsp himalayan salt 3 tablespoons of coconut oil
Mix in blender to form a paste spread on frozen base layer put back in freezer
Chocolate topping 80g cacao powder 2 teaspoons of vanilla powder 4 tablespoons of maple syrup 100g raw coconut oil
Melt oil in a bowl over a simmering water.. make sure the bowl isn’t touching. Once melted add other ingredients and spread on frozen mid layer… pop back in freezer….
Semi slice after a few minutes in the freezer otherwise the chocolate cracks when you cut it.
